For over 150 years
Founded in 1870, AU SABOT is one of France’s oldest cutlery manufacturers. Established in Thiers, the historic cradle of cutlery-making, this family-run business has, for over a century, upheld a tradition of craftsmanship passed down from generation to generation within its workshops.
Its collection reflects this living heritage: regional knives steeped in history, iconic folding knives for everyday use, as well as pieces designed for the table and the kitchen, crafted to complement both simple tasks and moments of togetherness.
The selection of materials and the craftsmanship draw on the experience of several generations, guaranteeing knives renowned for their quality, precision and durability. The company thus champions objects that are beautiful, useful and built to last.
Crafted with meticulous attention to detail and expert craftsmanship, Au Sabot knives embody authentic and functional cutlery, deeply rooted in tradition. Available throughout France and internationally, they carry on a legacy built on craftsmanship, materials and the passing down of skills.
A well-known brand
The name ‘Au Sabot’ draws inspiration from the world of the French countryside of yesteryear. Founded in 1870 in Thiers, the cutlery company was established at a time when knives were an integral part of everyday life, particularly for farm labourers, who often carried one with them for their daily tasks.
A simple and sturdy object, the wooden clog symbolised a way of living and working centred on practicality, sturdiness and durability.
From the very beginning, the cutlery company chose to engrave this name on its knives, thereby affirming its connection to a working-class tradition based on a job well done and respect for materials.
It reflects a commitment to simple yet essential values, inherited from the craftsmanship of days gone by.
Today, Au Sabot has successfully built on this heritage by developing a recognised brand catering to a variety of everyday uses: from the kitchen to the dining table, right through to folding knives. Whilst remaining true to its traditional roots and historic craftsmanship, the company designs knives built to last, combining tradition, functionality and modernity.
